These cookies are fabulous and they are easy to make. If you like coconut and/or walnuts like me, add them – but if you don’t leave them out. I have made this recipe with all of my fruity flavored Jams by Kim, but I have also used my savory Carrot and Ginger Jam, Pepper Jam, Tomato Jam, as well as our Cranberry Chutney. Every flavor yields excellent results!
So, for the recipe ingredients you ill need:
- ½ cup sweet butter
- 2/3 cup granulated sugar
- 1 large egg
- 1 ½ cups unbleached flour
- ½ tsp. baking powder
- ½ cup sweetened flaked coconut or ½ c finely chopped walnuts
- ¼ – 1/3 cup Jams by Kim’s Jam, any flavor or variety of flavors
- Confectioner’s sugar for dusting
Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Beat butter and sugar until light and fluffy. Add egg and beat well. Sift flour and baking powder together, and add to the butter mixture. Add coconut or walnuts and stir until just incorporated into the dough. Roll the dough mixture into 24 large balls (or 48 smaller balls) and place half on each baking sheet, at least 2 inches apart. Press a small finger (or the back of a wooden spoon) into each ball and fill the hole with ¼ – ½ tsp. of Jam. Bake cookies for 10-12 minutes until light golden colored. If necessary, add a little more jam while cookies are still warm. Cool cookies on a wire rack, and dust lightly with confectioner’s sugar. Makes 2 dozen large cookies or 4 dozen small cookies.
